Scala’s gets a new chef, and a facelift

Chef Justin Deering (Doc Rickett’s, 15 Romolo) is now in the venerable kitchen at Scala’s, updating the menu as the restaurant undergoes a refresh. The new menu will be more “brasserie,” with a focus on dishes from the wood oven. The chef will also have a hand in creating small bites for the Starlight Room. Scala's new menu format is going to skew more toward a brasserie look with larger pages, which Deering said gives him the opportunity to break the dishes into sections like "from the wood oven." "Currently there are a couple of pizzas and one whole fish being cooked out of there. Underutilized in my opinion, so plan on seeing that be an area of interest. Bone marrow, large format steaks, whole fish and the like," he said.
